Nan's Xmas Pudding

Nan’s Christmas Pudding & Custard

Christmas doesn’t have to be unhealthy! Try making this simple, yet delicious and healthy recipe for christmas dessert! You’ll love it so much that you’ll make this more than once a year!

My Nan and Nanna were two of the most special people in the world to me when I was growing up. They were both amazing cooks and I spent many hours with them in the kitchen. This is a clean eating version of my Nan’s Christmas pudding that has been a family staple every Christmas for as long as I remember.


1st group of ingredients

2 Tbs butter (or coconut oil to make dairy free)

4 Tbs maple syrup

1 ½ cups almond milk

2 cups mixed fruit

1 tsp mixed spice

¼ cup coconut oil


1 tsp bicarb soda


2nd group of ingredients

½ cup buckwheat flour

½ cup arrowroot powder

¼ cup almond meal

1 Tbs psyllium husks

1 tsp baking powder


Put the first group of ingredients (except bicarb soda) in a saucepan and bring to the boil. Boil for about 1 minute.

Pour into a mixing bowl and immediately add the bicarb soda – stir to make it froth.

Allow to cool for 10 minutes (no more).

Stir the 2nd group of ingredients into the wet mix.

Pour into a greased 6 cup steamer basin and steam in a large saucepan filled with water for 2 hours (make sure the water covers ⅔ of the sides of the steamer basin and it is simmering on a low-medium temperature).


Vanilla Custard


I’d have to say this is my favourite recipe from my cookbook. I tried about 5 different versions of custard (all failures!) until I got the idea for this one laying in bed at about 5am one morning. I was so excited when it worked! It is so creamy and delicious! Serve with Nan’s Xmas Pudding.


1 cup cashews, soaked in water 2 hrs or overnight, rinsed and drained

3 cups water

2 tsp vanilla extract

4 eggs

¼ cup raw honey or maple syrup

½ cup arrowroot flour


Blend the cashews and water in a high speed blender until smooth. Add the other ingredients and blend until mixed (10-20 seconds).

Pour the mixture into a saucepan, and stir constantly over medium heat until thickened.

Take off the heat and allow to cool. If there are some small lumps in the mixture, pour all back into the blender again and blend until smooth.
